Our second visit to Korea. In 2024, we took a magical journey to JookJangYeon in the Taebaek Mountains of Kyungsang Province (about two hours by train from Seoul). Our table was set among hundreds of tall fermentation crocks called jangdokdae. Jang is a seasoning made with fermented soybeans that Koreans use instead of salt, and there are many different types – doenjang, gochujang, kanjang, cheongkukjang. As important as terroir in winemaking, the natural environment is an essential factor in making jang. During the three-year fermentation and aging process, the jangs are exposed to climate and nature, and just like a fine wine, the taste differs depending on the vintage. We are very excited to return to Korea, site of one of our most memorable meals, and hope you’ll join us for this adventure!

한국에서의 두 번째 방문입니다. 2024년, 우리는 경상도 태백산맥에 위치한 죽장연으로 마법 같은 여정을 떠났습니다(서울에서 기차로 약 2시간 거리). 수백 개의 장독대 사이에 테이블이 마련되었으며, 장은 한국인들이 소금 대신 사용하는 발효된 콩으로 만든 조미료입니다. 장에는 된장, 고추장, 간장, 청국장 등 다양한 종류가 있습니다. 와인 제조에서 테루아르가 중요한 것처럼, 장을 만드는 데 있어 자연 환경 또한 필수적인 요소입니다. 3년간의 발효와 숙성 과정 동안 장은 기후와 자연에 노출되며, 좋은 와인처럼 수확 연도에 따라 맛이 달라집니다. 우리는 가장 기억에 남는 식사 중 하나를 경험했던 한국으로 돌아오게 되어 매우 기대되며, 이번 모험에 여러분을 초대합니다!
