HOST & GUEST CHEF: Pete Ghione | 1 Hotel Hanalei Bay

On Kauaʻi’s north shore, we set the long table on the sand at Hanalei Bay. Emerald mountains laced with waterfalls frame this crescent of beach, where taro fields fill the valley and fishing boats still work the waters offshore. Our partners at 1 Hotel Hanalei Bay, part of the Capital One Travel Premier Collection, share our belief that the best meals begin with respect for the land and sea.

In the field kitchen is Chef Pete Ghione, who cooks from the belief that food can heal. He builds his menus around whole, seasonal ingredients from the island’s farmers, ranchers and fishers, letting what’s growing and swimming nearby shape every plate. Beyond the kitchen, he supports culinary education and hunger relief through Green Our Planet and Three Square Food Bank.
