The long table returns to Shields Valley, where the 2,200-acre North Bridger Bison ranch stretches between the Bridger and Crazy Mountain ranges. Hosts Matt and Sarah Skoglund are leaders in regenerative ranching, raising bison with a “field-harvest” philosophy that honors both the animal and the wild grasslands of Montana.

At the open-air hearth, guest chef Andrew Mace of Old Salt Co-op brings his signature wood-fired mastery to the field. His menu will celebrate the rugged, honest flavors of the Mountain West, showcasing the ranch’s grass-fed bison alongside seasonal ingredients from nearby farms and producers.

Join us beneath the Big Sky for an evening at the source of our nourishment, as the sun sets over the prairie and the long table gathers once again.

Fun in the field doesn’t have to end when the last dish is cleared from the table. Instead of driving off, stick around after dinner and settle in at the ranch. When it’s time to turn in, you’ll rest well in your own canvas tent, outfitted for two guests. Drift to sleep under a blanket of stars and wake up to the crisp morning air, continental breakfast with a view of the high plains, and a guided nature walk – the perfect way to cap off an unforgettable off-the-grid experience.
