We return to the majestic McArthur Gulch, a 480-acre expanse of land protected by the Colorado Land Board Trust that encompasses rippling grasslands, woodlands and wildlife including elk calving grounds and goshawk nesting areas. The view from the field kitchen doesn’t get much better than this. Guests audibly gasped a few years back when they saw the table revealed in a sweeping meadow of tall grass and wildflowers.
